INGREDIENTS

Dough:

  • 165 g (3/4 cup) soften unsalted butter

  • 75g g (3/4 cup) icing sugar

  • 25 g (1/2) large beaten egg

  • 140 g (1 1/4 cup) all-purpose flour

  • 30 g (¼ cup) corn starch 

  • 50 g (½ cup) desiccated coconut  

  • 1/4 tsp salt

Decor:

  • Melted white chocolate

  • More desiccated coconut

Dough

1. Beat the softened unsalted butter and icing sugar with an electric mixer until pale in colour and fluffy. 

2. Add the beaten egg into the butter mixture and mix until combined. 

3. Whisk together the all-purpose flour, cornstarch, desiccated coconut, and salt. 

4. Combine the dry ingredients with the butter mixture. 

5. Load the cookie dough into a piping bag. 

6. Pipe the dough onto a lined baking tray.

Bake

7. Freeze the piped cookies for 5-10 minutes before baking in a preheated oven at 350°F/175°C for 8 minutes.

Decorate

8. To decorate, drizzle some melted white chocolate onto the cooled cookies and top it off with some desiccated coconut before it sets.
