Purple Eight Treasure Sticky Rice Pudding (八宝饭)

RECIPE BREAKDOWN

INGREDIENTS

300 g (1 1/2 cups) purple rice (black glutinous rice)

510 g (2 1/4 cups) water 

65 g (1/3 cup) brown sugar 

1 tbsp coconut oil

25 g (1/4 cup) dried Chinese red dates, pitted and diced

25 g (1/4 cup) dried goji berries

25 g (1/4 cup) craisins

25 g (1/4 cup) dried longan pulp

25 g (1/4 cup) raisins

25 g (1/4 cup) pumpkin seeds

25 g (1/4 cup) pecans

Whole roasted chestnuts


Additional Ingredients: 

Extra toppings for decor

Coconut oil

SPECIAL EQUIPMENT

Instant pot/pressure cooker (optional)

LET’S BEGIN!

Rice

1. Wash the black rice and glutinous rice, then mix with 4 ½ cups of cold water, and brown sugar in an instant pot. 

2. Soak the rice for 1 hour.

3. Cook on high pressure for 30 minutes and allow for natural release. 

Fillings

4. Soak the dried goji berries and dried longan pulp in some warm water.

5. Rinse the dried Chinese red dates and remove the pits.

6. Mix the 8 treasure ingredients and coconut oil with the warm rice. 

Assembly

7. Grease a bowl with some coconut oil and arrange the toppings on the bottom however you want. Reference the video to see how I made the red date flowers.

8. Tightly pack the rice mixture into the bowl and allow the rice to cool slightly at room temperature. 

9. Flip onto a plate and remove the bowl. Enjoy!
