INGREDIENTS

Filling:

  • 450 g ground turkey

  • 100 g (1) carrot

  • 100 g (1/2) red onion

  • 50 g (1/3 cup) frozen peas

  • 40 g (1/4 cup) quinoa 

  • 585 g (2 1/2 cups) chicken broth or water

  • drizzle of olive oil

  • as many garlic cloves as you’d like

  • dried oregano

  • 1/2 tbsp soya sauce 

  • salt and pepper 

  • 15 g (2 tbsp) all-purpose flour

Sweet potato mash: 

  • 450 g (1 large) sweet potato

  • 300 g (roughly 1/2) buttercup squash

  • 40 g (3 tbsp) salted butter

  • 1 egg 

  • 1 garlic clove, minced 

  • parmesan cheese

LET’S BEGIN!

Sweet potato mash

1. Peel and chop up the sweet potatoes and buttercup squash into chunks. 

2. Place into a pot and fill with water until it covers its contents. Boil for 15-20 minutes until the sweet potatoes and squash are fork tender but still firm (the larger the chunks the longer it takes to cook). 

Turkey Filling

3. Peel and dice a carrot and red onion, and roughly mince your garlic cloves. 

4. On the stove, heat up a large pan, wok, or dutch oven on high and coat the bottom with olive oil. Add minced garlic and oregano and lightly saute. 

5. Add the ground turkey into the pan stirring occasionally to prevent the bottom from burning and to break up the ground meat. If you prefer very fine bits of meat in the casserole, use a potato masher to mash the mixture. 

6. Once the ground turkey has browned slightly, add the carrots, onion, quinoa, all-purpose flour, soya sauce, salt and pepper to the pan and turn the heat down to medium. Stir until everything is combined.

7. Pour in the chicken stock and allow this to simmer for around 10 minutes or until most of the liquid has condensed. Stir occasionally. 

8. In the meantime, strain the cooked sweet potatoes and squash. Transfer into a large bowl, add salted butter, egg, and garlic and mash until smooth. Set aside. 

Assembly

9. Once the turkey filling is ready, portion and transfer into individual oven-safe dishes or a large casserole dish. Pack down tightly. 

10. Portion the prepared mashed sweet potato on top of the turkey filling and spread with a spoon. 

11. Top with parmesan cheese and bake in a preheated oven at 375°F/190°C for 15-20 minutes or until golden brown on top. Enjoy!
