INGREDIENTS

Dough:

  • 275g (2 1/2 cups) all-purpose flour

  • 2 tsp baking soda

  • 3 tsp ground ginger or freshly grated ginger

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 110g (1/2 cup) unsalted butter, melted

  • 100g (1/2 cup) brown sugar

  • 50g (1/4 cup) white granulated sugar

  • 80g (1/4 tbsp) fancy molasses

  • 1 large egg

Dough

1. Whisk together the melted unsalted butter with the white granulated sugar, brown sugar, egg, and molasses. 

2. In another bowl, combine the all-purpose flour with the baking soda, ground ginger, ground cinnamon and salt. 

3. Fold the wet ingredients into the dry ingredients. 

4. Transfer into a container and place the dough into the fridge for it to chill for at least 30 minutes.

Bake

5. Scoop the chilled cookie dough onto a line baking tray and flatten slightly. 

6. Sprinkle on a few drops of water before baking in a preheated oven at 350°F/175°C for 8 minutes.
