INGREDIENTS

Crinkle cookie dough:

  • 140 g (1 1/4 cups) all-purpose flour 

  • 30 g (1/4 cup) cornstarch 

  • 12 g (2 tbsp) matcha powder

  • 75 g (1/3 cup) melted unsalted butter 

  • 150 g (3/4 cup) white granulated sugar 

  • 1 large egg

  • 1 tsp baking powder

  • ¼ tsp salt 

Coating:

  • 50 g (1/2 cup) icing sugar

  • 15 g (2 tbsp) cornstarch

SPECIAL EQUIPMENT

  • Mini ice-cream scoop

Dough

1. Whisk the unsalted butter, white granulated sugar, and egg until combined. 

2. In a separate bowl, combine and sift the all-purpose flour, corn starch, matcha powder, baking powder, and salt. 

3. Fold the dry ingredients into the wet ingredients until a dough is formed. 

4. Chill the dough for at least 1 hour.

Shape & Coat

5. Combine the icing sugar and cornstarch in a bowl. 

6. Scoop the chilled cookie dough using an ice cream scoop and roll the dough in the sugar coating.

Bake

7. Place the dough onto a lined baking tray and bake in a preheated oven at 350°F/175°C for 9-10 minutes.
