Ricotta Bruschetta

INGREDIENTS

Toast: 

  • 1 baguette

  • Drizzle of olive oil

  • Garlic cloves

  • Salt

Ricotta spread:

  • 1/3 cup ricotta cheese

  • 1 tbsp greek yogurt

  • Salt

Tomato mixture: 

  • 2 heirloom tomatoes 

  • ¼ red onion 

  • Fresh basil leaves 

  • 2 garlic cloves (or however many you want)

  • Salt and pepper 

SPECIAL EQUIPMENT

  • Grater

TIPS & RECIPE NOTES

  • Assemble only before serving to avoid soggy bruschetta.

  • If tomato mixture is too liquidy, drain out the excess liquid before spooning onto toast.

LET’S BEGIN!

1. Slice the baguette and drizzle with olive oil. 

2. Toast until golden brown. 

3. Dice tomato, mince red onion, chiffonade fresh basil, and grate garlic cloves into a bowl. 

4. Combine with salt, pepper, and a drizzle of olive oil. Set aside. 

5. Rub garlic clove onto a toasted baguette. Lightly sprinkle with salt. 

6. To assemble, spread ricotta on the toast, then spoon on the tomato mixture. 

7. Garnish with basil leaves.
